1 c flour
2 c raisins, rinsed and drained
2 c currents, rinsed and drained
2 c diced maraschino red and green cherries
2 c mixed fruit
1 c lard
2 eggs
2 c brown sugar
2 c grated raw carrots
2 c grated raw potato
2 c flour
2 tsp baking soda
1 tsp salt
1 tsp each cinnamon, cloves and nutmeg

Directions:
Directions:
In a large bowl mix the first 5 ingredients. Cream together the lard, eggs and sugar, add the carrots and potato and mix well. Ad the creamed mix to the fruit mixture. Gradually add remaining ingredients and mix well.
Place mixture into into 4 1 litre sterilized jars, should fill jars 2/3 full. Wipe tops and put on rings and lids.
Place the jars into a hot water bath, ensuring water is only lukewarm and is 1/2 way up the jars. Steam the pudding for 3 hours, adding hot water as needed.
