1 carrot, shredded
3⁄4 cup panko breadcrumbs

Directions:
Preheat the oven to 400º F
Lightly grease a baking sheet lined with foil.
Heat the butter in a small pan over medium heat, add in the garlic, onions and carrots. Season with salt, pepper, cayenne and turmeric. Saute until onions are tender, set aside to cool. Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. Pour the drained broccoli into a large bowl, add the sauteed vegetables and mix gently. To the same bowl, add the panko, cheeses, eggs, and salt and pepper to taste. Mix together and form into patties, place on the prepared baking sheet.
Bake in the preheated oven for 15 mins. Flip and bake for another 15 mins or until browned and crispy.

Personal Notes:
Found this recipe on Facebook. Baked, not fried. Tweaked the recipe to call it my own by adding more spices and vegetables.
