1 Tbsp. Dijon mustard
4 Tbsp. red wine vinegar
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. freshly ground pepper
2 tsp. fresh lemon juice
1/4 cup scallion, chopped
1/2 cup olive oil


Directions:

Blend all vinaigrette ingredients. Toss beans with vinaigrette. Chill marinated beans in refrigerator for at least 8 hours (but not more than 1 day).

Just before serving, add feta cheese and walnuts.

*may substitute pine nuts for walnuts.
