2 T. vegetable oil
2 c. white rice
2 garlic cloves, minced
1/3 c. green onion, chopped
3 c. low sodium chicken broth
1 - 14 oz. can crushed tomatoes
1 bouillon cube, chicken flavored
salt and pepper to taste

Directions:
Directions:
Heat vegetable oil in a large skillet over medium-high heat. Saute rice and garlic until all the oil is soaked up. Chop green onion stems all the way to bottom 1/3 of white part of onion, add to rice. Add chicken broth, crushed tomatoes, and bouillon cube; stir well. Cover and reduce heat to simmer for 15 - 20 minutes. Add salt and pepper to taste.
