1 can of sliced beets ( or cook 5 to 6 medium raw beets)
1 Tbs. cornstarch
1 Tbs sugar
3/4 tsp. salt
dash of pepper
2/3 C water
1/4 C vinegar

Directions:
Directions:
Reserve your canned beet juice ( about 2/3 C.) or save cooking water in same amount.
Mix cornstarch, sugar, salt and pepper in saucepan. Gradually add water/juice and vinegar, Cook, stirring constantly, until mixture thickens. Boil and stir one minute add beets and heat through.
