1 1/2 lbs boneless, skinless chicken cutlets
3 T pesto
1/4 t. red pepper flakes
zest and juice from lime
2 T. olive oil
3 T. balsamic vinegar
1 T. honey
salt and pepper
l lb. asparagus
2 med. zucchini
1 red pepper in strips
Can also add other veg like beets, fennel, carrots

Mix pesto, red pepper flakes, lime, and 1/2 ts salt 1/4 t. pepper in ziplock and marinate chicken 1 hour or overnight.
Make dressing with vinegar, oil, 1/4 t. salt and pepper.

Roast veg at 425º with garlic olive oil, seasonings, herbs until brown and tender

Heat grill (or grill pan) after oil spray to med high and cook chicken 4-5 min on each side.
Plate chicken and veggies, slice chicken after rest, and pour dressing over all
