3 egg whites
3 c. sugar
2/3 c. light corn syrup
3/4 c. water
1/4 tsp. salt
1 tsp. vanilla
1 c. chopped pecans
6 candied cherries, quartered

Directions:
Line a 7x11 in. pan with waxed paper. Turn egg whites into large glass or metal bowl; let warm to room temperature, about 1 hour. In a heavy 3 qt. pan, combine sugar, syrup, and water. Cook over low heat; stir until sugar is dissolved. Cover and cook 1 minute longer to dissolve sugar on side of pan. Uncover and bring to boiling without stirring. Cook to 260 degrees F. Let cool slightly. When thermometer goes to 250 degrees F., beat egg whites with salt until soft peak forms. Gradually pour hot syrup mixture over egg whites, beating continuously at high speed until stiff peaks form. Using a wooden spoon, beat in vanilla, pecans, and quartered cherries. Continue beating until it holds shape and looks dull. Pour mixture into the prepared pan. Don't scrape saucepan. Cut into 24 pieces.
