1 c. raisins
1 c. dried fruit, diced
2 c. water
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground nutmeg
1 1/2 tsp. ground cinnamon
2 eggs, beaten
1 c. unsweetened applesauce
2 T. liquid sweetener
3/4 c. vegetable oil
1 tsp. vanilla
1/2 c. chopped nuts

Preheat oven to 350 degrees F. Grease a 10 in. fluted tube pan. Combine raisins, dried fruit, and water in a saucepan. Cook uncovered until water is evaporated and fruit is soft. Set aside to cool. Combine flour, baking soda, salt, nutmeg, and cinnamon in a large bowl; set aside. In a separate bowl, combine eggs, applesauce, liquid sweetener, oil, and vanilla; mix well. Add nuts and fruit mixture; mix well. Stir fruit mixture into dry ingredients and blend thoroughly. Pour into prepared pan. Bake for 35-40 minutes or until a knife inserted into center comes out clean.
