Ingredients: 1 lb. boneless chicken breast 5 bacon strips, cooked and chopped 5 Tbsp. diced roasted red pepper 8 oz. can sliced water chestnuts 11 oz. can mandarin oranges, drained 1 c. frozen pea pods, thawed and patted dry 2 1/2 c. romaine lettuce, torn 1 c. fried wonton strips 1/4 c. sliced almonds, toasted 5 tsp. sesame seeds, toasted 2 1/2 c. iceberg lettuce, torn Marinade: 1/3 c. soy sauce 1/4 c. orange juice 4 green onions, chopped 1 clove garlic, minced Dressing: 1/3 c. sugar 3 Tbsp. cider vinegar 2 1/4 tsp. onion juice 1 tsp. soy sauce 1/2 tsp. dry mustard 1/2 c. vegetable oil 2 1/4 tsp. sesame seeds, toasted

Directions:For marinade combine soy sauce, orange juice, half of the green onions, and garlic in large Ziploc bag. Add chicken and refrigerate overnight. Grill or broil chicken until cooked. Chill thoroughly and cut into strips. For the dressing combine sugar, vinegar, onion juice, soy sauce, mustard, and salt in medium bowl. Mix with an electric mixer on medium speed, slowly adding oil until mixture is thick. Add sesame seeds and beat thoroughly.
For the salad, combine finished chicken, bacon, red pepper, water chestnuts, orange sections, pea pods, remaining green onions, and lettuce in a large bowl. Add 3/4 cup of the dressing and toss lightly. Add wontons and toss again. Garnish with almonds and sesame seeds. |
