Ingredients:  
1 Can of low sodium Black Beans drained and rinsed well
2 Cans of White or Shoepeg Corn (low sodium) drained and rinsed well
1 small red onion chopped small
1 red & yellow or orange pepper chopped ( or 1/2 of each color )
2 - 3 jalapeno's seeded and deveined and chopped
1/2 cup Rice or Red Wine Vinegar ( either is fine)
1/4 cup or less Sugar
8 oz fat free crumbled plain feta cheese

Mix all except the feta - Add feta just before you serve it so doesn't get too soggy.

As for the vinegar and sugar .. I personally use less sugar and more vinegar but I like it spicy vs sweet. You can also cut the the Jalapenos if you prefer less heat.
