3 slices bacon, cold, diced
1 onion, peeled and diced
1/2 green bell pepper, seeded and diced
2 cloves garlic, minced
1 cup beer, preferably Mexican, plus more if needed
1/2 cup brewed coffee
1/2 cup Traeger Texas Spicy BBQ Sauce or any other
2 Tb. molasses
2 Tbl, jalapeño minced
2 tsp. chile powder
1 1/2 tsp. cumin
salt and pepper
3 15 oz. cans pinto beans

Directions:
Directions:
Put the bacon in a cold skillet, Turn heat to medium low and cook until done. Add onion, bell pepper and garlic and sauté about 5-10 minutes. Add beer, coffee, BBQ sauce, molasses,chili powder, jalapeños and cumin and simmer for 10 minutes. Add salt, pepper and more chile powder to taste.
Drain beans and rinse with cold water and drain again. Combine bacon mixture and beans and stir to mix.
Cook beans for 2-21/2 hours in crock pot on medium until liquid is syrupy. Add more beer if the beans dry out and let beans sit for a few minutes before serving.
