5 Chicken Breasts
1 C Sour Cream
1/4 C Diced green chile (or small can)
2 T Cumin
1 tsp salt
1 Can cream of chicken soup
2 Cans red enchilada sauce
Flour Tortillas
Shredded cheddar cheese
Black Olives, chopped
Black Beans
Onion
Lettuce

Directions:
Directions:
Poach or roast chicken breast. When cool enough, shred chicken into bowl (food processor with dough blade works great). Add sour cream, green chile, salt, and cumin to chicken and mix well (may have to add more sour cream if mixture seems dry).
In a separate bowl (or pie plate), mix can of cream of chicken with both cans of enchilada sauce.
Enchilada assembly:
Dip flour tortilla in sauce mixture. Move to plate. Add chicken mixture, sprinkle with cheese and olives. Roll up tortilla and place in 9x13 greased baking dish. Continue this process with remaining tortillas. When pan is full, pour remaining sauce over enchiladas and sprinkle with cheese.
Bake at 350 for 20-30 minutes.
