white cornmeal
buttermilk
canola oil

Directions:
Directions:
Preheat oven to 375º. Wash and cut okra into about 1/4 inch slices. Heat about 1/4 inch canola oil in an iron or heavy frying pan on medium high heat Add small amount of buttermilk to okra to moisten. Roll okra in cornmeal and add to hot oil in pan, filling pan to a depth of no more than one inch. Heat thoroughly on stovetop before placing in oven. When okra begins to brown, shake pan or stir lightly. Cook until crisp and brown, shaking or stirring occasionally. Drain on paper towels.
