2 Tbsp. olive oil
1 c. minced onion
3/4 c. grated and minced carrot
1 Tbsp. minced garlic
1 lb. uncooked hot italian sausage
2 oz. diced ham (or 1/2 c. from hamsteak)
7 cups water
5 cups chicken broth
1 lb. dry lentils
1 medium tomato, diced
2 Tbsp. vinegar
1 Tbsp. minced fresh basil
1 Tbsp. minced fresh parsley
2 bay leaves
1 1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dried thyme
1/2 tsp. dried oregano
1/2 tsp. red pepper flakes

Directions:
Heat olive oil in large pot over medium heat. Add onion, carrot, and garlic. Remove sausage from casing and add to pot. Saute for 8 minutes breaking apart sausage as it cooks. Add ham and cook for an additional minute. Add the remaining ingredients and bring to a boil. Reduce to a simmer and cook for 1 hour.
