2 lbs Ground Beef
2 med Yellow Onion
4 cans Stewed Tomatoes (14.5 oz)
8 med Carrots (sliced thin)
4 ribs Celery (sliced thin)
2 med Potatoes (cubed)
2 cups Water
½ cup Uncooked Rice (long grain)
1 tbs Salt
1 tsp Pepper

Directions:
Directions:
Cook meat, onions, salt and pepper over medium heat, drain. Add tomatoes, carrots, celery, potatoes, rice and water, bring to boil. Reduce heat, cover and simmer 30 minutes until vegetables and rice are tender. Uncover and simmer 30 minutes to thicken.
