2 lbs. boneless, skinless chicken breast, sliced
1 cup pancake mix or flour
2 eggs beaten
2 c frosted flakes, crushed
pan spray
4-5 c of vegetable oil for frying

Directions:
Directions:
Coat each chicken piece in pancake mix, shaking off any excess.
Then dip in eggs, let excess drip off.
Then roll in frosted flakes, shaking off any excess.
Place on plate, spray both sides with pan spray.

For Frying

Place oil in pot and heat on medium heat. fry a few pieces at a time until golden brown and centers are cooked thoroughly.

For Baking

Place on cookie sheet. Bake for 8 minutes. Turn each piece over and continue baking until outside is crisp and centers are cooked thoroughly about another 8 minutes.
