1-1/2 Cups Water
1 Pound Small okra pods, tops removed
2 Each Eggs
2 Tsp Baking powder
¼ Cup Flour
Salt & Black pepper
Hot sauce

Directions:
Directions:
Place 1-1/2 cups of water in a medium sauce pan and bring to a boil. Add the okra and cook for 10 minutes. Drain it and place in a food processor. Pulse until you have a paste. Scrape the paste into a medium sized bowl and combine it with the salt, pepper, eggs, baking powder and enough of the flour to make a thick batter.

In a cast-iron skillet or deep fryer, heat three inches of oil to 375 degrees.
Drop the batter a tablespoonful at a time into oil and fry until crisp and golden brown, about 5 minutes, turning the fritters once. When ready, drain the fritters on a paper towels and serve piping hot with hot sauce as a snack or a vegetable side dish.

Makes about 12 fritters.
