2 T olive oil
5 carrots, grated
2 tubs of 1 pound extra-firm tofu, drained and crumbled
1/3 c soy sauce
opt: 1/3 c sesame seeds
opt: cooked rice
1 tsp sesame oil

Directions:
Directions:
Heat oil over medium heat and cook carrots for 15 minutes. Add the tofu and cook, stirring until the carrots are soft about 5 minutes more. Add the soy sauce and sesame seeds. Cook 1 more minute. Stir in the sesame oil. Serve hot and over rice if desired.
