1 Lb. Trimmed Beef Chuck (1" Cubes)
2 Tsp. Oil
2 C. Sliced Mushrooms
2 Tsp.Tomato paste
4 C. Sliced Carrots
1 C. Green bean pieces
1 T. Cold Water
2 T. Flour
2 Lrg Yellow onion (sliced thin)
2 Minced Garlic Cloves
2 C beef broth
2 medium sliced potatoes
1 T. Corn Starch
1/4 C. Chopped Fresh Parsley

Directions:
Directions:
Flour meat; heat oil; add meat. Saute until browned; remove. Add onions and mushrooms to oil; saute. Add Garlic cloves; saute. Drain. Return meat to pan, stir in tomato paste and broth; bring to boil. Add enough water to cover; boil. reduce heat and simmer until beef is tender (1 1/2 hours) Skim foam. Add carrots, potatoes and green beans. Simmer 15 minutes. Mix cornstarch and cold water; stir into stew. Boil uncovered 1 minute. Sprinkle with parsley and serve.
