1 bag small potatos, halved
1/2 green pepper, diced
1/3 onion, diced
2 stalks green onion, sliced
1/2 cup plain Greek yogurt
1/2 tsp mustard
1 garlic clove, minced
2 tsp salt
1 tsp pepper
3 eggs, hard boiled
1 tbsp parsley, chopped

Directions:

1. Boil potatos and eggs, when done remove water and cool, peel eggs, chop up two, slice one lengthwise.
2. Add all ingredients (except 1 lengthwise cut egg) into a bowl and mix well.
3. Garnish top with sliced egg and parsley.
