4 cups fresh or frozen rhubarb (thawed)
4 cups chopped onions
1 1/2 cups cider vinegar
1 1/2 cups packed brown sugar
2 tsp salt
1 tsp allspice
1 tsp ground ginger
1 tsp ground cloves
1/2 tsp pepper
3/4 tsp cayenne pepper

1. Combine rhubarb and onions together in the vinegar and sugar mixture for 5 minutes.
2. Add the salt and spices and simmer for 2 hours, do not boil.
3. Pour into sterilized jars and seal.
