1/2 c. shortening
1/2 c. butter, softened
2 eggs
2 3/4 c. flour
2 tsp. cream of tartar
1/2 tsp salt
1 tsp. baking soda

For dipping:
1/4 c. sugar
1 Tbsp. cinnamon (or apple pie spice mix)

Directions:
Directions:
Heat oven to 400º F. Beat 1 1/2 cup sugar with shortening, butter, and eggs with mixer on medium speed (or with spoon). In a separate bowl, whisk together flour, cream of tartar, salt and soda, then stir into sugar mixture.

Shape dough into 1 1/4" balls. Mix 1/4 c. sugar and cinnamon in a small bowl. Roll the dough balls in the sugar mix and place 2" apart on ungreased cookie sheet. Bake about 10 minutes or until centers are almost set; cookies should not be browned. Remove from cookie sheet to cooling rack.
