2 cups of milk
2 cups of half-and-half
1/4 cup of butter
2 medium potatoes peeled and diced
2 cups of hot water
4, 16 oz. cans of oysters, drained
3 tsps. chicken bouillon
Salt and pepper to taste

Directions:
Directions:
Melt butter. Add potatoes, water, and bouillon. Cover and simmer about 20 minutes until potatoes are tender. Stir in milk, cream, oysters, salt and pepper. Garnish with parsley if desired.

Serve with oyster crackers.

When my father came home from the service in about 1946, he had several things he had learned to love during his days in the Army. He loved Spam, which he sometimes fried; he loved sardines, which he ate out of the can; and he loved oyster stew. When he had a deep craving for oyster stew, he always made it himself. He didn't like onions or spices in his stew, so it was rather like potato soup...with oysters. Of course, we all had to help with the preparation, though I wouldn't eat it, and I don't know that any of the other children would.
