1 ½ cup boiling water
1 cup oats
1 stick butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
½ teaspoon salt
1 ½ cup flour
1 teaspoon vanilla extract


Topping:
1 cup coconut
1 cup chopped nuts
1 cup brown sugar
1/3 cup milk
6 Tablespoons melted butter



Directions:
Directions:
Pour boiling water over oats and let stand for 20 minutes. In separate bowl, cream butter and sugars. Add eggs, soda, cinnamon, nutmeg, and salt to creamed mixture. Add oat mixture to cream mixture and stir well. Stir in flour and vanilla extract. Bake in greased baking pan at 350º for 35 minutes.
After cake is cooked, top with the topping mixture. Return cake to the broiler for 1 or 2 minutes or until coconut is lightly browned.

This recipe was given to me by a Southern Baptist missionary in 1973 when Aunt Gladys and I were visiting Nigeria. She made this cake regularly, as these ingredients were readily available even in Nigeria, whereas other ingredients such as cocoa could be hard to find to buy. This is a really easy cake to make and it doesn't have to be taken out of the pan like many other cakes.
