4 Tablespoons melted butter
3 eggs
1 cup milk
1 teaspoon salt
1 teaspoon baking powder
1 cup flour
1 lb. grated Swiss or other white cheese
2 thawed packages of chopped frozen spinach
a few shakes of tobacco sauce

Directions:
Directions:
In an oblong baking dish, melt butter. Let the butter grease the pan and put excess butter in a bowl with remaining ingredients. Mix well. Return mixture to the greased pan. Sprinkle with Parmesan cheese. Bake at 350º for about 40 minutes or until set. Cut into squares and serve as hors d’oeuvres. These squares freeze well and can be warmed up at the last minute.

I have been making these spinach and cheese bars since about 1975, when a friend from nursing school gave me the recipe. They are fantastic because they can be cooked, cut, frozen on a cookie sheet, and stored in a plastic bag in the freezer. Then when you need something quick and healthy, just pull one out of the freezer and bake about 20 minutes. They are even good served at room temperature, so take them on a picnic!
