Sea scallops about 16
2tsp butter
2tsp olive oil
salt & pepper
Alfredo:
2 Tbsp. butter
1/2 pint cream
1/4 c. fresh grated Parmesan cheese (or to taste)
black pepper, to taste

scallops:
emove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
-Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Serve immediately.
Alfredo:
Remove oil/butter mixture from skillet used to sear scallops.
Add butter, cream and cheese to skillet.
They will boil right away.
Add cheese while stirring constantly. Even though it is a hard cheese, it should melt quickly with the heat of skillet.
When cheese is mostly melted, add pepper. Remove from heat, add cooked pasta and scallops(if desired).
-Romano or Asiago cheese could also be used.
-The cheese will be add a salty taste.
-Amount of cheese can be adjusted to taste.

Scallops may be served incorporated into pasta and sauce or served separately.
