1/2 cup margarine
1 1/2 cups sugar
1 egg
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
2 cups chopped rhubarb (mixed with 1tbsp flour)
Topping:
1/2 cup margarine
2 tsp cinnamon
1 cup brown sugar

Directions:
1. Cream margarine well, add sugar and cream together.
2. Add egg and vanilla, mix well
3. Mix flour, baking soda, and salt with milk and add to creamed mixture
4. Place rhubarb in the bottom of pan and cover with cake batter
5. Sprinkle on topping (this will sink into the cake as it bakes giving it the "lunar" look
6. Bake 350ºF for 25-30 minutes
