No Bake Cranberry Cream Pie Recipe

3 c vanilla wafers
1/3 c chopped pecans toasted
1/4 c butter melted
FILLING:
1 package softened cream cheese
2/3 powdered sugar
1 tsp vanilla extract
1 c heavy whipping cream
TOPPING:
1 orange
2/3 c sugar
3 T cornstarch
2 T fresh or frozen cranberries

CRUST: in food processor pulse wafers until fine crumbs are achieved. Then add toasted pecans and melted butter, pulse a few times until just combined. Press into the bottom of a 9inch pie pan.

FILLING: In a large bowl, beat cream cheese and powdered sugar until light and fluffy; occasionally scraping the bottom and sides of bowl. Add vanilla. In a separate bowl whip cream to medium stiff peaks. Gently fold whipped cream into cream cheese mixture. Pour filling into prepared crust. Cover and refrigerate until set; at least 30 minutes to an hour before topping.

TOPPING:
From orange, grate 1 tsp zest and squeeze 3 T juice. In a saucepan combine sugar and cornstarch. Add in orange zest, juice, liqueur and cranberries. Cook over medium heat until thick; stirring occasionally. Remove from heat and allow to cool down over an ice bath stirring occasionally. once cooled top pie and refrigerate 1 hour before cutting.
