16 oz. bowtie pasta
2 Tbsp. + 1 Tbsp. champagne vinegar*
2 Tbsp. olive oil
2 cloves garlic, minced
½ cup sun-dried tomatoes
1 Tbsp. fresh basil, sliced into thin strips
½ cup feta cheese
salt and pepper

*White wine vinegar will work, too.

Directions:
Directions:
Cook pasta according to package directions (al dente). Immediately run under cold water to prevent overcooking. Drain.

Toss with olive oil and 2 Tbsp. vinegar. Add minced garlic and a dash of salt and pepper. Toss.

Re-hydrate tomatoes by adding remaining Tbsp. vinegar and microwaving for 15-20 seconds. (This step is optional). Add to pasta.

Add basil and feta cheese. Toss and serve!
