Spaghetti Squash:
1 large spaghetti squash
Roasted garlic
Salt and pepper
Butter

Marinara Sauce: 
2 tablespoons olive oil
2-3 cloves garlic, sliced or minced
1 medium onion, finely chopped
28 ounces stewed tomatoes
1 cup fresh Italian flat leaf parsley, chopped
½ cup fresh basil leaves, rolled and thinly sliced
Salt and pepper

Optional Spaghetti Squash Accompaniment or Mix-In:
1 large tomato, chopped
½ cup chopped fresh basil (some people prefer oregano)
½ teaspoon olive oil
½ teaspoon minced garlic
Salt and pepper to taste

Spaghetti Squash:
Preheat oven to 350 degrees. Cut spaghetti squash in half length-wise and place on baking sheet; bake 25-30 minutes until tender. Remove from oven and shred the squash with a fork; it will look like spaghetti. Add some roasted garlic, butter and/or salt and pepper to taste.

Serve with marinara sauce (recipe below).

Marinara Sauce:
Heat pan on medium-high heat. Add olive oil, garlic and onions; stir until soft then add remaining ingredients. Stir occasionally and reduce heat to simmer for 10-15 minutes; add salt and pepper to taste.

Serve over spaghetti squash, kale, or broccoli.
