1/2 Pork picnic, shoulder or butt
Lemon
Garlic, crushed
Oregano
Salt
Ground Bay Leaves
Onion, grated

Score fat cap and pierce pork all over its surface.

Mix all aromatics and slather over pork, marinate for at least 8 hours, preferably overnight.

6-7 hours before serving, place pork, into heavy bottomed roasting pan or Dutch oven, fat side down.

Cover tightly and cook at 300º until tender.

Uncover, flip pork over, raise oven temperature to 375º and cook until bone pulls away.
