12 150 g salmon fillet ortions (or other suitable fish)

1 cup bread crumbs 250 mL

1 cup chopped fresh dill 250 mL

100 g butter, melted

2 lemons, zest and juice 2

2 tsp fine salt 10 mL

2tbsp grated horseradish

dill sprigs and lemon wedges for garnish

Arrange the salmon on a parchment-lined baking tray.

Stir bread crumbs, dill, melted buttter, lemon zest and juice, and salt. Pack the bread mixture over the salmon fillets in an even layer. Bake for about 12 minutes in a 375 °F oven.

Balsamic Onions:

2 Tbsp olive oil

2 large onions, sliced (or 3 cups cippolini or pearl onions, peeled)

1/3 cup balsamic vinegar

salt & pepper

For balsamic onions, heat oil in a large sauté pan over medium heat and add onions. Sweat onions, stirring often, until all liquid had evaporated, about 20 minutes, Add half of balsamic vinegar and simmer until absorbed. Add remaining balsamic and reduce until a glaze. Season to taste and set aside.
