3 eggs
1 cup sugar
1 cup zwieback toast, ground fine
1 cup walnuts and or pecans, ground fine
1 teaspoon baking powder
1 teaspoon vanilla
½ teaspoon salt
Red current jelly
Whipped cream

Directions:
Directions:
Preheat oven at 325-350. Grease a 9" cake pan

Grind zweiback and nuts and set aside. Should be almost cornmeal consistency. Mix eggs and sugar, add baking powder, salt and vanilla, stir. Add zweiback and nuts, mix well then pour into greased pan. Bake 40 minutes.
Remove from oven and cool. When cool, top with red currant jelly to about ¼” thick. Before serving, top with fresh whipped cream.
Cake can be frozen and toppings added later.
Servings should be no more than 2x2” squares as this is extremely rich cake.

My wonderful Aunt Dot, used to bring this to every family celebration or gathering. It is truly an awesome cake and easy to make. If you have a food processor it takes no time at all to make.
