Cream together one at a time
1 cup shortening
1 3/4 cup sugar
1 tsp vanilla
3 eggs separated. Blend yolks in. Beat whites until they are stiff, then fold in
1 cup cold water
1/3 cup pureed tomatoes

Sift together
2 1/2 cups cake flour
1/2 cup dry cocoa
1 1/2 tsp baking soda
1 tsp salt

Chocolate Buttercream Frosting
1/3 cup butter, softened
1/2 cup cocoa
1 tsp vanilla
1/3 cup milk
1 (16 oz) package powdered sugar, sifted

For cake:
Preheat oven to 350 degrees. Mix dry mixture into creamy mixture. Bake in two greased and floured 8 1/2 inch pans at 350 degrees for 30 minutes. Frost with chocolate buttercream frosting. Top with strawberries.

For frosting
Cream butter with mixer. Combine sugar and cocoa. Add sugar and cocoa mixture to butter. Add milk to mixture and continue to beat until desired consistency.

This is one of my favorite cake recipes! The recipe is taken from Patricia Polacco's children's book of the same name, "Thunder Cake". Thunder Cake is very much like a good, super moist chocolate cake, only there's a unique and tasty twist: Tomatoes!

It's best (according to the story's lore and my experience) to begin making this cake when a storm is approaching. It truly does seem to taste best when baked under those weather conditions. Also, reading the book while baking it greatly adds to the experience. Especially, if you have little ones helping make the cake. It'll be the best stormy afternoon you'll have together! If you're thinking of skipping the tomatoes, DON'T!!! They're what give the cake its deliciously rich & complex flavor and its supreme moistness. Try the recipe as written. Bake it during a thunderstorm just for the fun of it. I first made this cake when Matt was in second grade and came home with the recipe after the class read the story "Thunder Cake" And yes, we made it during a thunderstorm, even though it took a while for a storm to be at our house. I have made it many times since. It is a great cake!
