1 qt. pineapple juice
1 c. soy sauce
2/3 c. white wine
Juice of 2 lemons
2-inch piece of ginger, crushed
6 cloves garlic, crushed
2/3 tsp. aniseed
1 c. brown sugar
1 1/3 tsp. salt (I omit)
1/3 tsp. black pepper

Directions:
Directions:
Combine liquid ingredients in wide bowl or pan. Tie ginger, garlic, and aniseed in cheesecloth bag; drop into bowl. Add brown sugar, salt, and pepper; stir. Reserve some of this marinade for basting. Add meat and refrigerate several hours or preferably overnight. Remove meat from marinade, discarding the liquid. Grill the meat using the reserved liquid to baste.

This will keep at least two weeks in refrigerator. This is enough marinade for two chickens.
I once used this to marinate steaks for a golf tournament dinner… it took 4 gal. of pineapple juice, etc.
