½ cup cider vinegar
¼ cup white sugar
¼ cup packed brown sugar
1 medium head red cabbage
2 bacon strips, diced
1 medium tart apple, peeled and chopped
½ cup onion, chopped
¼ cup water
2 T. white wine vinegar
½ tsp. salt
¼ tsp. pepper
⅛ tsp. ground cloves

Directions:

In a large bowl, whisk the cider vinegar and sugars until sugars are dissolved. Shred cabbage(about 10 cups) and stir into vinegar mixture. Let stand while cooking bacon in a large skillet(12") on medium heat until crisp. Add the apple and onion and saute until tender. Stir in water and cabbage mixture. Bring to a boil. Reduce heat to medium-low cover and simmer for 30 minutes. Stir in the remaining ingredients. Simmer uncovered for 5 minutes. Serves 8 to 12.
