1/2 cup sugar,divided
1 envelope unflavored gelatin
1/8 tsp. salt
2 eggs separated
1 1/2 cup Florida orange juice
3/4 tsp. grated orange peel
1/4 tsp. vanilla extract
1 cup slices strawberries
1 orange,peeled and sectioned
Whole strawberries

Toasted Coconut Pie Shell
1/4 c.butter or marg.
2 2/3 cup shredded coconut

Make pie shell;In large skillet melt butter,stir in coconut. Cook over low heat,stirring occasionally,until coconut is lightly toasted. Press evenly on bottom and sides of a buttered 9" pie plate. Refrigerate 30 min.

In medium saucepan combine 1/4 cup sugar, gelatin and salt. Beat egg yolks with orange juice;blend into gelatin mixture. Stir over low heat until gelatin is completely dissolved ,about 5 min. Remove from heat.Stir in orange peel and vanilla. Chill,stirring occasionally until mixture mounds slightly when dropped from a spoon. Beat egg whites until soft peaks form;gradually add remaining 1/2 cup sugar and beat until stiff. Fold in gelatin mixture. Line bottom of toasted coconut pie shell with sliced strawberries;spoon gelatin mixture over berries. Chill until firm. Garnish with orange sections and whole strawberries.

That's it. I am making this as soon as the first fresh strawberries are ripe! I wonder if the ethnicity of the orange juice is really crucial or was this just a recipe put out by a Florida Orange juice company? Anyhow- I remember the crust was awesome and would be divine used in other recipes!
