2 C. Chopped onion (about 2 medium)
1 1/2 lb. Sweet Potatoes, peeled and cut into 3/4" cubes (about 4 cups)
1 clove garlic, finely chopped
1 Chipotle in Adobo, finely chopped
1 T. Chili powder
1 tsp. Ground Cumin
1/2 tsp. Paprika
1 (14.5 oz) can no-salt added diced tomatoes with the juice
2 (16 oz) cans no salt added black beans, rinsed and drained
16 oz. no salt added vegetable broth
1/2 tsp. fine sea salt

Add all ingredients to crock pot. Set on low and cook 6 to 8 hours.

Serve hot topped with a small amount of shredded cheddar cheese and/or sour cream.

About 200 calories per 1 cup serving.
