1/2 c pine nuts
2 T olive oil
3 cloves garlic, minced
2 c broccoli florets
1 1/2 c matchstick carrots
1/2 tsp salt
1/2 tsp dried Italian seasoning
1 T lemon juice
1/4 tsp ground black pepper

Directions:
Directions:
In a large skillet, toast pine nuts over medium heat, stirring frequently, until golden (about 3 minutes) Remove pine nuts to a small bowl and set aside.
In the same skillet, heat oil, add garlic and sauté 1 minute or just until garlic starts to change color. Add broccoli, carrots, salt and Italian seasoning. Increase heat to medium-high and sauté for 10 minutes or until vegetables are crisp tender. If vegetables start to stick add a few teaspoons of water.
To serve: place cooked vegetables in a serving bowl, toss with lemon juice, pepper and pine nuts.
