1 1/2 c all-purpose flour
3/4 c sugar
2 tsp baking powder
1/2 tsp salt
2 eggs, beaten
1/2 c light Karo syrup
1/2 c milk
1/4 c canola oil
1 tsp grated orange peel (zest)
1 c fresh cranberries, coarsely chopped
1/2 c chopped walnuts

Directions:

Pre-heat oven to 400º
Spray muffin tins with vegetable cooking spray.
Combine flour, sugar, baking powder and salt. Set aside.
Combine eggs, syrup, milk, oil and orange zest.
Combine dry ingredients with egg mixture until just well blended.
Stir in cranberries and nuts.
Bake 18 to 22 minutes
