1 medium spaghetti squash
2 T butter
1 small onion, sliced very thin
1/4 tsp red pepper (or black is OR)
1/4 tsp salt
1 tsp dried thyme
1/2 c sour cream
1/2 c shredded cheddar cheese, divided

Directions:
Directions:
Cut the spaghetti squash in half lengthwise and remove the seeds. Place in a covered dish with 1/4 inch of water. Microwave on high for 10 to 12 minutes. OR bake @350º for 30 minutes in a pre-heated oven.
In a skillet, over medium-high heat, sauté the onions in butter with pepper, salt and thyme. Cook until onions are lightly browned. Using a fork, scrape the insides of the squash into a mixing bowl. Combine with sour cream and half of the cheese. Add the onion mixture and blend. Transfer to a lightly greased baking dish and top with the remaining cheese.
Bake @375º for 15 to 20 minutes.
