4 cups plain flour
3 tsp baking powder
1/8 tsp salt
2 T sugar
4 oz butter
1 c milk - approximately

1 egg, beaten with 1 tsp sugar to use as glaze

Directions:
Directions:
Pre-heat oven to 450º
Sift all dry ingredients together. Rub in the chilled butter until the mixture resembles fine bread crumbs. Make a well in the center and add most of the milk. Mix to a soft dough adding milk if necessary. Turn out on a floured surface and knead lightly. Roll out to 1" thick. Using a 1 1/2" biscuit cutter, dip the cutter into flour and cut the dough into rounds.
Place the scones on a lightly floured baking sheet, glaze with the beaten egg mixture using a pastry brush. Put into hot oven immediately.
Bake for approximately 15 minutes or until scones have risen and have a golden top.

Serve with butter (or clotted cream) and strawberry jam.
