2 pkgs. Miniature bread (rye or pumpernickel)
Shaved corned beef from the deli or make your own corned beef. I usually buy about 1.5 lbs deli shaved corned beef or bake 3-5 lbs of fresh corned beef.
sauerkraut (bagged kind): drain it well through a strainer.

Thousand Island dressing
Swiss cheese sliced (1 lb)

Directions:
Directions:
Lay bread squares out on cookie sheet pans.
Spread thousand island on the bread slices.
Add the corned beef in a pile on top of each slice.
Add sauerkraut on top of beef.
Top with a slice of swiss cheese to fit the bread.
You may have to cut the cheese slices to fit.

Bake in 350 degree oven till cheese smelts and turns slightly brown on top. Serve hot from the oven!

These are made every Christmas Eve as part of the Lauer family traditions. Everyone loves them and they are easy to fix ahead on cookie sheets and pop into the oven right before you want to serve them. serve them hot right out of the oven!
