1 small eggplant - peeled / diced
1 red pepper - diced
1 yellow pepper - diced
1 red onion - diced
2 cloves garlic - minced

PLACE ON JELLY ROLL PAN AND TOP WITH:

1 1/2 tsp. kosher salt
1/3 C olive oil
1/2 tsp. pepper

Bake at 425* for 40 minutes, turning once

Cook 1 lb. orzo

WHISK TOGETHER:

1/3 C fresh lemon juice
1/3 C olive oil
1 tsp. kosher salt
1 tsp. pepper

Toss lemon oil with cooked orzo. Add roasted vegetables.

PLACE ON PLATTER THEN TOP WITH:

4 minced scallions
1/4 C toasted pine nuts
3/4 lb. crumbled feta
15 basil leaves - chopped
