4 Cups water
1 Cup yellow cornmeal
1/4 Cup flour
1 TBS salt

Directions:
Directions:
Bring 3 cups of water to a boil.

Mix 1 Cup water, cornmeal, flour, and salt until smooth. Add slowly to boiling water, stirring as you add. Cover and cook for 30 minutes.

Today, the world calls this simple mush, "Polenta," and it is served in some of the finest restaurants. My mom used to laugh at this! We at this like a cereal with milk and sugar - yum - but it is also very, very good poured into a loaf pan, refrigerated until set, and then sliced and fried.
