1 c Gluten Free Bisquick Mix
1 egg, beaten
1/3 c sugar
1/2 c milk
1 T coconut oil
1/2 c blueberries, washed and drained well.

Pre-heat oven to 400º
In a large mixing bowl blend all ingredients except blueberries.
Gently fold in berries after batter is well mixed.
Spoon batter into a 6 cup muffin tin. Fill each cup almost to the top.
Bake 18 to 20 minutes or until tops are golden brown.
