Ingredients:  
1 Cup Lentils
1/4 Cup Barley
3 Cups Veggie Broth (suggest better than broth)
1 Large Onion - Diced
3-4 Cloves Garlic- Minced

Choice of Other Veggies (choose as you like):
8 oz sliced mushrooms
2-3 peeled and diced carrots
1 red pepper - chopped
Olive Oil

Directions:
Directions:
Heat Olive Oil over medium in nice size skillet (with top available).
Throw in onion and then other veggies for 5-7 minutes, with garlic last minute or two.

Add and "Toast" Lentils by cooking for 3-5 minutes with veggies, throw in barley for last minute and mix frequently.
Add Veggie Broth and cover over medium light for 10-15 minutes (on a slow boil), then keep covered and simmer for 30-45 minutes until all (or most) broth is evaporated.

Eat by itself (side or main dish) or add chicken, salmon or Eric's curry encrusted tofu. Yum!
