In a wok, saute diced onions and scallions, red pepper, green pepper and celery in a little oil until soft.
Put that aside. Take 2 large eggs and scramble in a separate pan. Put rice together in the wok or large pan with vegeatables and toss slowly so it doesnt get mushy. ( The longer the rice sits befroe the better. It should be cool)
Add lows odium soy saucea little bit at a time to taste.
Add the eggs choped up small after scrambling.
Add large can of button mushrooms (optional)
Add a can of water chestnuts, drained.
Sprinkle 8-10 drops of tobasco to taste.
Reheat right before serving.
