1 1/2 cups blueberries (fresh or frozen), divided
1/2 cup water
1/4 cup sugar
2 tsp. + 1/4 tsp. cornstarch dissolved in 1 1/2 tbsp. warm water
1/4 tsp. vanilla

Directions:
Directions:
Put 3/4 cup blueberries in small saucepan. Cover with 1/2 cup water, then add sugar. Heat over medium-high heat until mixture is at a low boil and blueberries are just starting to break apart. Add dissolved cornstarch mixture and bring to a rolling boil. Turn heat down and simmer 2-3 minutes. (Add a little water, a little at a time, if sauce gets too thick)

Remove from heat; add rest of blueberries and vanilla; stir gently.

Serve warm.

I've used this as a sauce for French Toast; delicious! Would be great over pancakes and vanilla ice cream, too.
