4 T. butter, plus extra for greasing
2 lb. Vidalia or other sweet onions (thinly sliced)
1 tsp. salt plus a pinch
1 1/2 T. all-purpose flour
1 tsp. baking powder
3 large eggs
1 c. heavy cream
3/8 c. freshly grated Parmesan cheese

Preheat the oven to 350º. In a large skillet, melt the butter over moderately low heat. Add the sliced onions and a generous pinch of salt and cook, stirring occasionally, until the onions are soft and golden, about 20 minutes. Let the onions cool completely. Butter an 8 x 8 inch baking dish. In a small bowl, whisk the flour with the baking powder and 1 tsp. of salt. In a large bowl, beat the eggs with the heavy cream and grated cheese. Whisk in the dry ingredients until incorporated, then fold in the onions. Spoon the soufflé mixture into the prepared baking dish and bake for about 35 minutes or until the soufflé is set and golden on top. Serve right away.
